Pavlova - Australian or New Zealand? Pavlova is a dessert that has evolved from both New Zealand and Australian influences. The origine of pavlova for many years has caused great debate between Australia and New Zealand. When the Russian ballet dancer Anna Pavlova visited Australia and New Zealand in 1926 and then Australia again in 1929 chefs in both countries created desserts for cakes in her honour. She was famous for her solo dance The Dying Swan in Swan Lake, and the pavlova dessert was inspired by the shape and colour of the dancer's costume. |
